Just came up with a new soup for my cleanse. It’s great if you are trying to detoxify or lose weight. Normally in soups I use olive oil and almond milk, but this one I did without to cut calories. The cauliflower and zucchini make it a little creamy. I like adding fresh raw spinach to my soups at the end so you get that chlorophyll and fresh greens.

When you are serious about losing weight, you have to measure out everything and count calories. Olive oil and nut milk can add up. Soup is a great snack to have on hand. All of the snacks people eat are carbs and the calories add up. I’m doing completely grain free so have to have lots of veggies on hand. Eating green stuff all day makes you feel great, lots of energy and your skin starts to glow. I try to make 100 calorie snacks so I make my daily goal.

First I grind my spices fresh in a coffee grinder
1 tsp coriander
2 tsp cumin
½ tsp black pepper
5 Cardamon pods

Chop two leeks and cook with the spices in ½ cup veggie broth. I use a stone derived non-stick pan that is PFOA free.

In another pot, boil
1 cup green beans
½ head of cauliflower
1 bunch of asparagus
1 zucchini
Veggie broth – just enough to cover the vegetables

I add the zucchini last so it doesn’t over cook, it just needs 2 minutes.
Only cook vegetables until there are just getting soft, so you can put a fork through. Do not over cook!

In Vitamixer puree:
½ of boiled vegetables
½ of the leeks
1 cup fresh spinach
¼ cup cilantro
¼ cup parsley
1 tbsp ginger juice
1 tbsp real salt
Optional: ½-1 cup almond milk to make creamy
2 tbsp avocado
1 tbsp olive oil

Repeat with the other half of the ingredients.
Eat within 1-2 days.
