Hi everyone! Just sitting down to dinner and wanted to share tonights salad inspiration. I called it “Earthy” because it has root vegetables. The brown stick like things you see are burdock. I use Burdock root a lot because it heals the liver. I use the tincture in my liver formula, I use the tea to help lose weight. It’s very bitter (tastes pretty bad in the tincture) which is good for digestion. The other benefit is, when I drink bitter teas, especially burdock root, it completely kills my sugar cravings. Not sure why but it works for me. Burdock root also has a lot of iron in it, so it’s great for vegans.  I buy Dave’s burdock root at the farmers market. Prepared like this, they don’t taste bitter, they don’t have much of a taste at all, but I love them.

Tonights bean is adzuki bean. Adzuki has one of the highest protein content per cup, 39 grams. I can never eat a full cup in a meal though, 1/2-3/4 cup is the most I can eat at a time.

It has red onion and red cabbage in it. I love eating raw cabbage. It’s so good for you. Most people are not getting enough roughage and fiber today. You are supposed to have approximately 25 grams per day. A cup of greens, like spinach has 0.7-1 grams per cup. Kale has 1 gram per cup. A half a cup shredded cabbage has 9 grams.  In total, this salad has about 15 grams of protein. If you have two salads a day you should be good! It will keep you regular and the mint will keep you smelling fresh and clean.

I always keep a head of green and red cabbage in my frig. At least 3-4 days a week I have grated cabbage raw in my meals. Sometimes I just chop it, sometimes I grate if very fine. Either way, it’s such a great source of fiber. I especially like to eat it at night for a snack. I often work late and will get low blood sugar. It’s not good to eat before bed so I always struggle with what I can eat that’s healthy that won’t put on weight before bed. If I eat a cabbage salad, I feel great in the morning and it fills you up.

People who never eat vegetables and live on starch and meat usually have really toxic insides. They are not regular and often have a hard time losing weight. You should learn to love vegetables. Just make yourself eat them, even if you don’t want to, and you will develop and love and taste for them.

It’s like working out. Some people don’t like to get out there and do it, but they feel good after and they do it because they want the result. It’s the same for all good health habits. Just do it. Then enjoy the results.

2 cups baby kale
1/4 cup fresh mint
1/2-1 cup sprouts – alfalfa, kale, and bean
1/8 cup red onion, chopped
1/2 cup adzuki beans
1/4 cup burdock root

For salad dressing, I just did 1 tbsp olive oil, juice of 1 small meyer lemon, some fresh ginger juice and sea salt to taste. I’m hooked on ginger. It’s so great in the winter to warm you on the inside.
